Arfisti – totalutnyttjande av hundkäx


Arfisti är ett experimentell workshop som testar hur landets mest hatade växt, hundkäx, kan användas på olika sätt i mat, förpackning, papper med mera.

Here Arfisti tackles the challenge of finding uses for cow parsley, which is classified as an alien invasive species that most people hate. Preliminary research on the plant shows that it is very interesting for various reasons, e.g. high nutritional value and high levels of antioxidants. Arfisti is researching how to have cow parsley classified as food and whether it is possible to utilize all parts of the plant. The main challenges are how to process, preserve and cook cow parsley. Along with looking at the edible parts of the plant, everything else the process yields is used as a raw material for various things. Nothing is wasted. Arfisti will demonstrate the results of experiments and offers a culinary event and workshop where she guides people in the plant´s utilization.
The Arfist is a one woman search and rescue team, promoting self-sufficient food production – using weeds. During a global pandemic where anything can happen and imports of the country´s resources may be curtailed, local solutions are here being sought out. Perhaps the most notorious weed known to any Icelander is actually a very useful plant, replete with usage possibilities.

Sono Matseljur at the Nordic House offer dishes containing cow parsley between 17:30 and 22:00 from May 21 to 23.
